The Top Sirloin is a very flavorful and versatile cut of meat. The cut is from the front shoulder and probably most resembles a top sirloin in terms of flavor and tenderness though the cuts are totally unrelated. Flat Irons come in the petite portion size, 4-6 ounces, and are perfect for a quick an easy meal that can be prepared anytime of the week. Approx. 1-1.5 lb.The skirt steak is really a smaller, thinner version of the flank steak. It can be used in much the same way. Because of its size and thinness it is very easy to overcook.
